Mr. Bing: Ice Cream You Eat with a Fork

Have you ever been tempted to eat a flower? We’re guessing the answer is no. But we bet you’d feel differently about these creamy “carnations.” Served from a brightly designed, aqua-hued food truck, these luscious, light-as-air treats are actually ice cream shavings — an innovative dessert concept that’s taking Miami by storm.

Despite what you might think, Mr. Bing shaved ice cream bears absolutely no resemblance to shaved ice. Inspired by a Taiwanese dessert called she hua bing (literally, “snow ice flower”), shaved ice cream boasts a taste and texture that’s completely unique — light, flavorful and best eaten with a fork. Some customers have even likened it to frozen cotton candy.

Mr. Bing was founded by Ryan Barouh, a former financial professional who first sampled the dessert at the home of his girlfriend’s family. After months of research, including a trip to Taiwan, Barouh launched his version of the treat. Not surprisingly, Mr. Bing was a hit. Flavors include such diverse options as chocolate, peanut butter and green tea, along with a myriad of toppings and drizzles (fresh fruit, oreos, condensed milk and more).

Regrettably, Miami is not on What the Trucks’ itinerary this summer, or we would make a beeline for Mr. Bing. However, as longtime ice cream lovers, we may have to head south in September to experience this wondrous creation for ourselves.
